1. What is hot carcass weight?
When you purchase a quarter of beef it is important to understand that you are purchasing the beef based on hot carcass weight. Hot carcass weight is the weight of the unchilled beef carcass in pounds after the head, hide and internal organs have been removed. For most cattle the hot carcass weight will be approximately 60% of the live animal weight. This is the most economical way to purchase beef. The advantage of purchasing this way is you receive a large amount of beef and pay the same price for every cut of beef.

2. How large of a freezer do I require when purchasing a quarter of beef?
We recommend a 5-7 cubic ft freezer to hold your quarter of beef.

3. Is your beef grass or grain finished?
Our calves are raised alongside their mothers and spend the summer months grazing on grass, they are weaned in the fall and then finished on a forage and grain based ration. 

4. How will my beef come packaged?
All beef comes frozen and packaged in air tight cryovac packaging.
Lean ground beef is packaged in 1lb packages 
Steaks are packaged 2 per package and are cut ¾” thick.
Roasts are 3.5lbs – 5lbs each

5. Can I customize my quarter orders?
We do not offer customization when ordering quarters. We have chosen a selection of steaks and roasts that are extremely popular with most customers. The selection we offer in our quarters also maximizes the beef and minimizes trim and waste.

6. Are there any fillers in the processed products?
No, our processed products are 100% beef and do not have any fillers in them.

7. Where is your beef harvested?
All of our beef animals are harvested in a provincially inspected facility that follows all government rules and regulations.

8. How many pounds can I expect to receive in a quarter?
Every 1/4 is approximately 187 lbs. Quarter’s are purchased based on hot carcass weight. The exact weight of your quarter is determined after the beef is harvested.

9. What is the cost of a quarter of beef?
A quarter will be approximately 187 LBS x 6.50= $1215.50. The exact cost will be determined once the animal is harvested.

10. What cuts are included in a quarter?
  • New York Steaks, Rib Eye Steaks, Sirloin Steaks, Tenderloin Steaks, 
  • Sirloin Tip Roasts, Cross Rib Roasts, Chuck Roasts, Rump Roasts
  • Stew Meat, Lean Ground Beef, Brisket
  • Steaks are packaged 2 per pack and are approximately 3/4" thick. 
  • Roasts are 3-5 lbs each
  • Everything is packaged in cryovac.
11. What is VBP Plus and CRSB certified?
Verified Beef Production Plus and the Canadian Roundtable for Sustainable Beef are both certifications that ensure beef producers are following the most comprehensive and complete management and environmental practices. Our farm is audited annually to ensure we are complying and following all appropriate protocols. These certifications are our commitment to our customers that their beef was raised with the highest level of care.

12. Is your beef antibiotic and medication free?
We raise our cattle in an environment that promotes responsible management and utilizes preventative measures. We do use medications and antibiotics when necessary to treat cattle. We believe that the most humane and ethical production methods utilize medications when needed to ensure that cattle are treated when necessary. The number of cattle that are treated is very small because of the management practices that we follow. If an animal is treated they are pulled from the beef program and all drug withdrawal times are strictly followed.
